Today was good- went to Marysville, the city I lived in from my first birthday to my seventh, where my niece, brother, & sister in law currently live. My niece, Camille, is getting so big!! I love her so much, she has such an amazing personality and 2 1/2 years old. My sister is also three months pregnant – so exciting!! We find out the sex of the baby on the 7th.
Sleepy & wanting to read, so I’ll make it quick.
For breakfast I had 1/3 cup oats with 1/3 cup soy milk, 1/2 cup water, 1/2 banana, 1 tsp flax, 1 tsp cinnamon (way too much-completely overpowered everything else) and 2 tsp mini semisweet chocolate chips, & strawberries.
I had lunch at my brother’s house - we had BLTs! Mine consisted of Smart Bacon (ehh, I wouldn’t buy it – bland but crispy- I’d rather try Tempeh Bacon from VWAV) lettuce, tomato, and whole wheat bread. Not sure about the calories but I’m fine with that. I also had a LOT of ratatouille. So good! Consisted of zucchini, some yellow squash, eggplant, mushroom, & bell peppers, all tossed in olive oil.
On the way home, I got to go to my favorite health food store – PCC Natural Markets! I’ve never been to a Whole Foods, so that’s probably why. The closest one is in Redmond or Seattle, pretty far away, but we’ll go eventually. I had a bunch of samples, including Steph’s Tofu (way good), a Quinoa Tabouli Salad, Field Roast Salad (bought 1/2 a pound of that – so good but 10.99 per lb), Turkish Garbanzo Salad, aaand I think that’s it. Oh & some rosemary crackers. In the car on the long drive home, I had a few of my chocolate raspberry cookies – bad.
For dinner, I had, idk, 3/4-1 cup whole wheat penne with marinara and a small side salad. I also ran two miles before dinner but it wasn’t much and I wish I could have gotten in more exercise today. I did run around, playing with Camille a bit.
My plan for tomorrow is to eat three full meals with no snacking. Hopefully I can achieve that. Trying to go by the Fit from Within mantra of only starting to eat three times – therefore only stopping eating three times. I doubt it will work at all for me but I’ll give it a go. So, breakfast tomorrow, 1/2 cup oats, 1/2 soy, 1/2 banana with whatever toppings sound good – somewhere around 400 calories is my goal. After breakfast, going driving with my dad, and he wants to go for a long time, yay!! I wanted to drive so badly all day today. My mom wouldn’t let me since we were going all the way to Marysville. After the drive, I’ll come home & run 5 mi, then have lunch. Salad, smoothie, or the field roast I bought. And dinner, whatever Mom’s making (with my own vegan additions).
Tomorrow’s already Sunday! Blegh. But my mom said she might let me drive to school Monday. [:
For breakfast this morning, I had chocolate banana peanut butter oats! I used 1/2 cup oats, 1/2 cup soy milk, 1/2 cup water, 1/2 small banana, teeny bit of peanut butter, topped with, I don’t know- 1/3 cup Puffins – and a bit of some chocolate peanut butter frosting I made for cupcakes a while ago & never used. Next time, I’ll omit the peanut butter cause I couldn’t taste it – or just put it on top as opposed to stirring it in.
Also, I stirred in a tablespoon of flaxseeds.
Deeelicious. Problem is – about 350 calories of delicious. This held me over from 5:45 to about 4:00 pm with minor stomach growls though, so maybe it’s worth it.
After school, I went driving with my mom – got my permit on Wednesday so this was exciting! I love driving, it’s really enthralling so far, hahah. I’m terrified of parallel parking though..
When I got home, I started baking MORE muffins – this time Lemon Poppyseed for my sister in law, Jill. She’s three months pregnant with my second niece/nephew! So excited.<333 We’re going to visit my niece, Camille, Jill, and my brother Aaron tomorrow. I didn’t want to come empty handed!
I also had apple & peanut butter as well as a bunch more snacks – too many. ]: I also was scheduled to go out for Thai food with my friend, so this was baaaad Kasey..
I talked myself into ordering something more indulgent than sautéed veggies & tofu, but now I’m regretting it so much. I got sweet & sour tofu with veggies (definitely vegan, no worries there). It was fried though and I NEVER eat fried foods. I’m not overly full or anything but my mind is driving me insaaaane. I want to get on the treadmill RIGHT now but my mom won’t let me.. Ugh. Sometimes I wish I was as carefree as my friends when it comes to calories. I don’t have that super fast kid metabolism, unfortunately..
I’m trying to stop beating myself up.
I also made chocolate raspberry cookies and had a very small one. They’re whole wheat, low in fat, and almost sugar free so it should be okay..
Tomorrow, I want to go running in the morning before we leave for my brother’s house, hopefully I can. And I need to stop stressing. What’s done is done – I’m allowed to indulge..
For real. This has been a pretty shitty week and it draaagged on. Hopefully next week will be better! Ooh & tomorrow is the last day of February – getting closer and closer to June! Eeeek.

1/2 cup Puffins, 1/2 cup Whole Soy Vanilla yogurt, 2 tsp flaxseeds (I like ‘em whole) and 1/2 small banana.
I wish I could have my breakfast set out all pretty in the morning for its picture, but I’m eating at 5-5:30 am and I have NO natural light to do so. Maybe when the days get longer! Oh, and sorry that’s huge – trying to be quick & don’t want to resize.

Around 9:00 am, I had a Nutz Over Chocolate Luna Bar. Most of the bloggers I read prefer Lära bars, which are delicious as well, but I LOOOVE my Lunas!! Probably because of my sweet tooth.
After school, I came home & immediately put a whole acorn squash in the oven. I’ve decided that on driver’s ed nights – Tuesdays & Thursdays- I’m going to eat my big dinner meal BEFORE driver’s ed – at 4:00 – 4:30. Afterwards, I’ll have a quick snack so I don’t have to go to bed with too empty or too full of a stomach.
On the side, I had steamed broccoli and one piece of Dave’s Killer Bread with Smart Balance Light. Oh, and you know I smothered that squash in Smart Balance & pepper, too! Yes, I eat a whole squash at a time. Don’t judge me.
I know a lot of people put things like brown sugar on their squash, but my family has never sweetened it – yuck! Just pepper & butter (or margarine, in my case) and it’s good to go.
My mom made some Alexia Waffle Fries and left me some for after class, which I had with Organic Heinz Ketchup. None of that corn syrup-y regular shit for me, thanks.
Now, I’m going to have yet another Lemon Blueberry Muffin. I deserve it- my calories are actually pretty low for today! And it sounds heavenly.

Well, not quite – two hour delay day. I hate when it snows this late in winter. I was kinda feeling like spring might actually be returning in the next 300 years, but then snow. Last year, it snowed in April! That shouldn’t be allowed, really..
I took a few pictures of my breakfast this morning but have to wait to post them – my dad took his camera and the USB port on mine is mysteriously broken… so I have to put my memory card to his in order to plug it into my USB. I need one of those little USB connectors that take memory cards, I’ll get one soon.
For breakfast, I had 1/2 cup WholeSoy Vanilla yogurt, a teeeeny bit of peanut butter stirred in, 2 tsp flaxseeds, 1/2 a tiny banana,and 1/2 cup Peanut Butter Puffins. I really am addicted to them, there’s no other way to say it.
All that was only about 190 calories, so I had one of the Lemon Blueberry Muffins I made yesterday. (I also had one for dessert last night. I subbed out the oil for 1/3 cup unsweetened applesauce, used whole wheat flour, and cut the sugar from 1 cup to 1/2 cup. This made them only 140 calories - healthy calories at that! And they are absolutely deliiiicious. The pumpkin muffins I made are good, but something about them just isn’t for me. I haven’t actually eaten a whole one, just picks off my parents’. These ones, however, are diiivine and definitely for me. I made a dozen and there’s only nine left already – making them again soon for sure! They’re best heated with a bit of Smart Balance Light. Mmmm.
I woke up at five, had my coffee and breakfast, THEN found out I don’t have school until ten. Definitely not going to be able to fall asleep, yet working out sounds torturous. I’ll just lay in bed, watch some tv, read some blogs [:

Can I just say that I absolutely love Barack Obama? I’m still finding it difficult to wrap my head around the fact that he was really, truly elected. America is coming far, people. Slowly, but surely!
I’m praying that one hundred years from now (if not sooner) America will look at animal testing/cruelty the way we currently do slavery. Where is the moral difference? (Other than in speciesism – á la Peter Singer.)
Anyway – sorry, but no pictures yet today. I had my typical cereal for breakfast, then an apple & peanut butter after school. Since then I’ve snacked (rather mindlessly – oops) on some Multigrain Crackers my mom picked up at Costco and some pretzels. For dinner, we’re having my FAVORITE Spanish Rice with salsa, those Low Carb Factory or whatever it is high fiber tortillas, aaand pinto beans. So simple yet so delicious.
Just went for a lovely 5 mile run – felt soooo good to finally get that in again!! It was a really pleasant one.
I might go make some Lemon Blueberry Muffins from The Joy of Vegan Baking if my mom will lend me the kitchen…

Ugh, I have not had a good day today. It began with sleeping past my alarm and it will end with not going to sleep until two hours later than I’d like.
Around lunchtime today, I had a Luna bar, hoping it would make me a bit less ravenous for my afternoon snack and less likely to over eat. Backfired!! I was super irritable and so hungry I was dizzy by the time I got home at three. I had an apple and a salad full of beans, but twenty minutes later, still hungry, so I picked at a mini cookie from a few days ago and a piece of Dave’s Killer Bread. Both are now gone. And then I waited like an hour and was STILL hungry, so I had an Alternative Bagel with some peanut butter. More than I needed! I need to work on my eating schedule, for sure. I just did an ab workout that I love, but no time to get a run in today.. Hopefully I’ve have the willpower & energy tomorrow!
Honestly, all I want to do at the moment is sleep. Unfortunately, my first driver’s ed class is in a half hour until 7. UGH. When am I going to eat dinner?!?! I have it for 2 1/2 months (I think) every Tuesday & Thursday so I need to figure out a plan…
Ahhh, today was loooong. And I didn’t get a workout in ]: I’m pretty ticked at myself for that. After school, my mom & I had errands to run – I didn’t get home until 4:30 ish. As a snack, I had too many pretzels with Athens (I think that’s what it’s called) Roasted Red Pepper Hummus. I really need to make my own hummus – that was a terribly uneconomic purchase. Alongside that, I had a medium Granny Smith Apple. I always end up splurging on after school snacks – cause I don’t eat lunch!! Stupid of me, but it really is inconvenient.. Anyway, that turned out to be about 280 calories. Ugh, I can’t wait until I feel comfortable enough to stop counting calories… (I gained five or so pounds in the last few months due to little bites of this & that and big portion sizes, which is why I returned to calorie counting.) It’s a bit stressful.
I just baked two batches of ‘The Best Pumpkin Muffins‘ from VWAV with raisins. A dozen for my dad and a dozen for a friend who sampled one and loved it. Hopefully her family won’t be too dismayed at a dozen ‘weird’ vegan muffins in their kitchen…
I’m not sure if you can see it in the pictures, but the liners I used are Spongebob Squarepants, lol. I asked my mom to pick me up some the other day & the only ones she could find were these. I made these with the full fat version of the recipe, mainly to see how they differ from the lower fat version I typically make. These ones aren’t for me – the 1/2 cup of oil freaks me too much. My dad wouldn’t have touched the last batch had he known they were low fat – the fact that they were both whole wheat and vegan already scared him!
Dinner tonight is stir-fried veggies, brown rice, and last night’s tofu. Although it’s marinated Italian, I’m sure it’ll go alright with this dish. I had a teeny triangle (or three) earlier and it tastes even better today!
I’m starving. I might post later, maybe not.
It’s 5:50 am and I’m already ready to go back to bed!! Sadly, I won’t be back in bed til eight or nine tonight…
My morning routine is a bit eccentric. It doesn’t take much time for me to get ready – 40 minutes tops – and I leave for school at 7 am, but I wake up at 5. I like to be able to get up, go on the internet for a bit, leisurely eat my breakfast, drink my coffee, chat with my dad before he leaves for work, etc. THEN at six I go get ready for school.
This morning I woke up starving so I had a huge breakfast. 410 calories as opposed to my usual 200-300. Oh well – it’s Monday & I’m probably going for at least a 3 mi run tonight. Anyway, no picture, but I had my cereal mix with a side of toast. Dave’s Killer Bread is soooo good! I topped it with a little Smart Balance Light.
The Academy Awards were really good last night – I like how the show is more fast-paced and viewer friendly this year. Hugh Jackman was a good host!! cried when Heath’s family accepted the award..and possibly when Queen Latifah sang & the slideshow was played. I’m a softie like my daddy.
Almost six – I must go & get ready!
I received the book about two weeks ago from my lovely cousin/best friend; a belated birthday/ Christmas present. I’ve been really into baking lately, mainly making recipes from The Joy of Vegan Cooking, so tonight I broke in VWAV a bit. I’ve made the Best Pumpkin Muffins – my dad ADORES them, I need to make another batch. I added raisins, too, and switched out 1/2 cup oil for 1/3 cup applesauce. This made them extra moist. I also made the Lemon Gem Cupcakes. I made them mini – 36 mini cakes as opposed to a dozen regular sized. These I wasn’t the biggest fan of -they didn’t stay together well. I subbed out 1/3 cup of the sugar for 1/3 cup calorie-free sweetener so perhaps that’s why. After sitting a few days, they got more lemon-y. I did not frost them.
Anyway! Earlier, I pressed a block of firm tofu. I’ve only prepared tofu myself once and it went terribly, so this was pretty scary. I cut it into slices width wise, then halved them, then sliced the halves into triangles. Then, I marinated it in Isa’s Italian Marinade, baked it for 30 minutes (flipping after 20) and it turned out pretty good – EXTREMELY flavorful, pretty chewy, and pretty crispy.
My mom made chicken for the rest of the fam and ‘smashed’ red potatoes, seasoned and with Earth Balance & soy milk (gotta love her for veganizing an old recipe!). Right before I was going to steam two pounds of Brussels Sprouts, my mom blew up our microwave! VWAV came to the rescue – in fifteen quick minutes I whipped up the Roased Brussels Sprouts with Toasted Garlic. I love how long & fancy the name is when it is really the simplest recipe.
Please excuse the terrible cell phone picture! I didn’t have my camera on hand. It was all much more appetizing to look at than this picture leads you to believe.
I ended up eating half the tofu, maybe less, and had seconds on the mashed potatoes. I forgot how filling tofu is – all that damn protein.
My walk today was lovely – an hour of about 4 mph walking up hills and all around my town. It was the perfect temperature and I enjoyed myself so much!
Watching the Oscars and getting sleepy – waking up at five am for school tomorrow…Oh, I’ll probably have a Lemon Gem mini cupcake (mine came out to be 60 cal each) or a little teeny ice cream cone with Soy Delicious - chocolate peanut butter flavor! Or…both. ;]
