			<content:encoded><![CDATA[<p>Today was good- went to <strong>Marysville,</strong> the city I lived in from my first birthday to my seventh, where my niece, brother, &amp; sister in law currently live. My niece, Camille, is getting so big!! I love her so much, she has such an amazing personality and 2 1/2 years old. My sister is also three months pregnant &#8211; <strong>so exciting!! </strong>We find out the sex of the baby on the 7th.</p>
<p>Sleepy &amp; wanting to read, so I&#8217;ll make it quick.</p>
<p>For breakfast I had 1/3 cup <strong>oats </strong>with 1/3 cup<strong> soy milk</strong>, 1/2 cup <strong>water</strong>, 1/2 <strong>banana</strong>, 1 tsp <strong>flax</strong>, 1 tsp<strong> cinnamon </strong>(way too much-completely overpowered everything else) and 2 tsp <strong>mini semisweet chocolate chips, &amp; strawberries.</strong> <img class="aligncenter size-full wp-image-92" title="getattachment-1" src="http://kctheveganteen.files.wordpress.com/2009/03/getattachment-1.jpg?w=490&#038;h=367" alt="getattachment-1" width="490" height="367" /></p>
<p>I had lunch at my <strong>brother&#8217;s house</strong> - we had<strong> BLTs</strong>! Mine consisted of <strong>Smart Bacon </strong>(ehh, I wouldn&#8217;t buy it &#8211; bland but crispy- I&#8217;d rather try Tempeh Bacon from<em> VWAV</em>) <strong>lettuce, tomato,</strong> and <strong>whole wheat bread</strong>. Not sure about the calories but I&#8217;m fine with that. I also had a LOT of <strong>ratatouille</strong>. So good! Consisted of <strong>zucchini, some yellow squash, eggplant, mushroom, &amp; bell peppers, </strong>all tossed in <strong>olive oil</strong>. </p>
<p>On the way home, I got to go to my favorite health food store &#8211; <strong>PCC Natural Markets</strong>! I&#8217;ve never been to a Whole Foods, so that&#8217;s probably why. The closest one is in Redmond or Seattle, pretty far away, but we&#8217;ll go eventually. I had a bunch of samples, including <strong>Steph&#8217;s Tofu </strong>(way good), a <strong>Quinoa Tabouli Salad, Field Roast Salad</strong> (bought 1/2 a pound of that &#8211; so good but 10.99 per lb), <strong>Turkish Garbanzo Salad, </strong>aaand I think that&#8217;s it. Oh &amp; some <strong>rosemary crackers</strong>. In the car on the long drive home, I had a few of my <strong>chocolate raspberry cookies &#8211; </strong>bad. </p>
<p>For dinner, I had, idk, 3/4-1 cup <strong>whole wheat penne</strong> with <strong>marinara </strong>and a small <strong>side salad</strong>. I also ran two miles before dinner but it wasn&#8217;t much and I wish I could have gotten in more exercise today. I did run around, playing with Camille a bit. </p>
<p>My plan for tomorrow is to eat three full meals with no snacking. Hopefully I can achieve that. Trying to go by the <em>Fit from Within </em> mantra of only starting to eat three times &#8211; therefore only stopping eating three times. I doubt it will work at all for me but I&#8217;ll give it a go. So, breakfast tomorrow, 1/2 cup oats, 1/2 soy, 1/2 banana with whatever toppings sound good &#8211; somewhere around 400 calories is my goal. After breakfast, going driving with my dad, and he wants to go for a long time, yay!! I wanted to drive so badly all day today. My mom wouldn&#8217;t let me since we were going all the way to Marysville. After the drive, I&#8217;ll come home &amp; run 5 mi, then have lunch. Salad, smoothie, or the field roast I bought. And dinner, whatever Mom&#8217;s making (with my own vegan additions). </p>
<p>Tomorrow&#8217;s already Sunday! Blegh. But my mom said she might let me drive to school Monday. [: </p>

			<content:encoded><![CDATA[<p>For <strong>breakfast </strong>this morning, I had <strong>chocolate banana peanut butter oats! </strong>I used 1/2 cup <strong>oats</strong>, 1/2 cup <strong>soy milk</strong>, 1/2 cup <strong>water</strong>, 1/2 small<strong> banana</strong>, teeny bit of <strong>peanut butter</strong>, topped with, I don&#8217;t know- 1/3 cup <strong>Puffins</strong> &#8211; and a bit of some<strong> chocolate peanut butter frosting</strong> I made for cupcakes a while ago &amp; never used. Next time, I&#8217;ll omit the peanut butter cause I couldn&#8217;t taste it &#8211; or just put it on top as opposed to stirring it in.</p>
<p><img class="aligncenter size-full wp-image-87" title="img_0192" src="http://kctheveganteen.files.wordpress.com/2009/02/img_0192.jpg?w=490&#038;h=367" alt="img_0192" width="490" height="367" />Also, I stirred in a tablespoon of <strong>flaxseeds</strong>.</p>
<p><img class="aligncenter size-full wp-image-86" title="img_0195" src="http://kctheveganteen.files.wordpress.com/2009/02/img_0195.jpg?w=490&#038;h=367" alt="img_0195" width="490" height="367" />Deeelicious. Problem is &#8211; about<strong> 350 calories </strong><strong>of delicious. </strong>This held me over from 5:45 to about 4:00 pm with minor stomach growls though, so maybe it&#8217;s worth it.</p>
<p>After school, I went driving with my mom &#8211; got my permit on Wednesday so this was exciting! I love driving, it&#8217;s really enthralling so far, hahah. I&#8217;m terrified of parallel parking though.. </p>
<p>When I got home, I started baking MORE muffins &#8211; this time <strong>Lemon Poppyseed</strong> for my sister in law, Jill. She&#8217;s three months pregnant with my second niece/nephew! So excited.&lt;333 We&#8217;re going to visit my niece, Camille, Jill, and my brother Aaron tomorrow. I didn&#8217;t want to come empty handed!</p>

<p>I also had <strong>apple &amp; peanut butter</strong> as well as a bunch more snacks &#8211; too many. ]: I also was scheduled to go out for Thai food with my friend, so this was baaaad Kasey.. </p>
<p>I talked myself into ordering something more indulgent than sautéed veggies &amp; tofu, but now I&#8217;m regretting it so much. I got <strong>sweet &amp; sour tofu</strong> with veggies (definitely vegan, no worries there). It was fried though and I NEVER eat fried foods. I&#8217;m not overly full or anything but my mind is driving me insaaaane. I want to get on the treadmill RIGHT now but my mom won&#8217;t let me.. Ugh. Sometimes I wish I was as carefree as my friends when it comes to calories. I don&#8217;t have that super fast kid metabolism, unfortunately.. </p>
<p>I&#8217;m trying to stop beating myself up.</p>

<p>Tomorrow, I want to go <strong>running</strong> in the morning before we leave for my brother&#8217;s house, hopefully I can. And I need to stop stressing. What&#8217;s done is done &#8211; I&#8217;m allowed to indulge.. </p>

			<content:encoded><![CDATA[<p>Aaand I&#8217;ve got a couple pictures for you! [: I&#8217;m exhausted at the moment and hungry so I&#8217;ll keep this short. First of all &#8211; my yogurt &amp; muffin breakfast from this morning:</p>
<p><img class="aligncenter size-full wp-image-72" title="img_5941" src="http://kctheveganteen.files.wordpress.com/2009/02/img_5941.jpg?w=490&#038;h=653" alt="img_5941" width="490" height="653" /><strong>1/2 cup Puffins, 1/2 cup Whole Soy Vanilla yogurt, 2 tsp flaxseeds </strong><strong>(I like &#8216;em whole) </strong><strong>and 1/2 small banana. </strong></p>
<p>I wish I could have my breakfast set out all <strong>pretty </strong>in the morning for its picture, but I&#8217;m eating at 5-5:30 am and I have <strong>NO natural light </strong>to do so. Maybe when the days get longer! Oh, and sorry that&#8217;s huge &#8211; trying to be quick &amp; don&#8217;t want to resize. </p>

<p>This picture could have been so much nicer with light. That muffin is bigger than it looks, by the way.</p>
<p>Around 9:00 am, I had a <strong>Nutz Over Chocolate Luna Bar</strong>. Most of the bloggers I read prefer <strong>Lära bars</strong>, which are delicious as well, but I LOOOVE my Lunas!! Probably because of my <strong>sweet tooth</strong>.</p>
<p>After school, I came home &amp; immediately put a whole <strong>acorn squash</strong> in the oven. I&#8217;ve decided that on driver&#8217;s ed nights &#8211; Tuesdays &amp; Thursdays- I&#8217;m going to eat my big <strong>dinner </strong>meal BEFORE<strong> </strong>driver&#8217;s ed &#8211; at 4:00 &#8211; 4:30. Afterwards, I&#8217;ll have a quick snack so I don&#8217;t have to go to bed with too empty or too full of a stomach. </p>
<p><img class="aligncenter size-full wp-image-76" title="img_6212" src="http://kctheveganteen.files.wordpress.com/2009/02/img_6212.jpg?w=490&#038;h=367" alt="img_6212" width="490" height="367" />On the side, I had <strong>steamed broccoli</strong> and one piece of <strong>Dave&#8217;s Killer Bread with Smart Balance Light.</strong> Oh, and you know I smothered that squash in Smart Balance &amp; pepper, too! Yes, I eat a whole squash at a time. Don&#8217;t judge me.</p>
<p>I know a lot of people put things like <strong>brown sugar</strong> on their squash, but my family has never sweetened it &#8211; yuck! Just pepper &amp; butter (or margarine, in my case) and it&#8217;s good to go. </p>
<p>My mom made some <strong>Alexia Waffle Fries</strong> and left me some for after class, which I had with <strong>Organic Heinz Ketchup.</strong> None of that corn syrup-y regular shit for me, thanks. </p>
<p>Now, I&#8217;m going to have yet another <strong>Lemon Blueberry Muffin</strong>. I deserve it- my calories are actually pretty low for today! And it sounds heavenly.</p>

			<content:encoded><![CDATA[<p>Well, not quite &#8211; <strong>two hour delay</strong> day. I hate when it snows this late in winter. I was kinda feeling like spring might actually be returning in the next 300 years, but then snow. Last year, it snowed in April! That shouldn&#8217;t be allowed, really..</p>
<p>I took a few pictures of my breakfast this morning but have to wait to post them &#8211; my dad took his camera and the USB port on mine is mysteriously broken&#8230; so I have to put my memory card to his in order to plug it into my USB. I need one of those little USB connectors that take memory cards, I&#8217;ll get one soon.</p>
<p>For breakfast, I had 1/2 cup <strong>WholeSoy Vanilla yogurt</strong>, a teeeeny bit of <strong>peanut butter</strong> stirred in, 2 tsp<strong> flaxseeds,</strong> <strong>1/2 a tiny</strong><strong> banana</strong>,and 1/2 cup<strong> Peanut Butter Puffins</strong>. I really am addicted to them, there&#8217;s no other way to say it.</p>
<p>All that was only about <strong>190 calories</strong>, so I had one of the <strong>Lemon Blueberry Muffins </strong>I made yesterday. (I also had one for dessert last night. I subbed out the <strong>oil</strong> for 1/3 cup <strong>unsweetened applesauce,</strong> used <strong>whole wheat flour</strong>, and cut the <strong>sugar</strong> from 1 cup to 1/2 cup. This made them only <strong>140 calories</strong> - healthy calories at that! And they are absolutely deliiiicious. The <strong>pumpkin muffins</strong> I made are good, but something about them just isn&#8217;t for me. I haven&#8217;t actually eaten a whole one, just picks off my parents&#8217;. These ones, however, are diiivine and definitely for me. I made a dozen and there&#8217;s only nine left already &#8211; making them again soon for sure! They&#8217;re best <strong>heated</strong> with a bit of <strong>Smart Balance Light</strong>. Mmmm. </p>
<p>I woke up at <strong>five, </strong>had my <strong>coffee</strong> and <strong>breakfast,</strong> THEN found out I don&#8217;t have school until ten. Definitely not going to be able to fall asleep, yet working out sounds torturous. I&#8217;ll just lay in bed, watch some tv, read some blogs [:</p>

<p>I&#8217;m praying that <strong>one hundred years from now</strong> (if not sooner) America will look at <strong>animal testing/cruelty</strong> the way we currently do <strong>slavery</strong>. Where is the moral difference? (Other than in <strong>speciesism &#8211; </strong>á la Peter Singer.) </p>
<p>Anyway &#8211; sorry, but no pictures yet today. I had my typical <strong>cereal </strong>for breakfast, then an <strong>apple &amp; peanut butter </strong>after school. Since then I&#8217;ve snacked (rather mindlessly &#8211; oops) on some <strong>Multigrain Crackers</strong> my mom picked up at Costco and some <strong>pretzels</strong>. For dinner, we&#8217;re having my FAVORITE <strong>Spanish Rice</strong> with <strong>salsa, </strong>those Low Carb Factory or whatever it is high fiber <strong>tortillas</strong>, aaand <strong>pinto beans. </strong>So simple yet so delicious. </p>
<p>Just went for a lovely <strong>5 mile</strong> run &#8211; felt soooo good to finally get that in again!! It was a really <strong>pleasant</strong> one. </p>
<p>I might go make some <strong>Lemon Blueberry Muffins</strong> from <em>The Joy of Vegan Baking</em> if my mom will lend me the kitchen&#8230;</p>

			<content:encoded><![CDATA[<p>Ugh, I have not had a good day today. It began with sleeping past my alarm and it will end with not going to sleep until two hours later than I&#8217;d like. </p>
<p>Around lunchtime today, I had a <strong>Luna bar</strong>, hoping it would make me a bit less ravenous for my <strong>afternoon snack</strong> and less likely to over eat. <strong>Backfired!!</strong> I was super irritable and so hungry I was dizzy by the time I got home at three. I had an <strong>apple </strong>and a<strong> salad full of beans</strong>, but twenty minutes later, still hungry, so I picked at a <strong>mini cookie</strong> from a few days ago and a piece of <strong>Dave&#8217;s Killer Bread.</strong> Both are now gone. And then I waited like an hour and was STILL hungry, so I had an <strong>Alternative Bagel</strong> with some <strong>peanut butter</strong>. More than I needed! I need to work on my eating schedule, for sure. I just did an <strong>ab workout </strong>that I love, but no time to get a run in today.. Hopefully I&#8217;ve have the<strong> willpower &amp; energy</strong> tomorrow! </p>
<p>Honestly, all I want to do at the moment is sleep. Unfortunately, my first <strong>driver&#8217;s ed </strong>class is in a half hour until 7. UGH. When am I going to eat dinner?!?! I have it for 2 1/2 months (I think) every Tuesday &amp; Thursday so I need to figure out a plan&#8230;</p>

I really need to make my own hummus &#8211; that was a terribly uneconomic purchase. Alongside that, I had a medium <strong>Granny Smith Apple.</strong> I always end up splurging on after school snacks &#8211; cause I don&#8217;t eat lunch!! Stupid of me, but it really is inconvenient.. Anyway, that turned out to be about <strong>280 calories</strong>. Ugh, I can&#8217;t wait until I feel comfortable enough to stop counting calories&#8230; (I gained five or so pounds in the last few months due to little bites of this &amp; that and big portion sizes, which is why I returned to <strong>calorie counting</strong>.) It&#8217;s a bit stressful.</p>
<p>I just baked two batches of &#8216;<strong>The Best Pumpkin Muffins</strong>&#8216; from <em>VWAV </em>with <strong>raisins</strong>. A dozen for my dad and a dozen for a friend who sampled one and loved it. Hopefully her family won&#8217;t be too dismayed at a dozen &#8216;weird&#8217; <strong>vegan muffins</strong> in their kitchen&#8230;   </p>

<p><img class="aligncenter size-full wp-image-57" title="img_0178" src="http://kctheveganteen.files.wordpress.com/2009/02/img_0178.jpg?w=490" alt="img_0178"   />I&#8217;m not sure if you can see it in the pictures, but the liners I used are <strong>Spongebob</strong> <strong>Squarepants</strong>, lol. I asked my mom to pick me up some the other day &amp; the only ones she could find were these. <img class="aligncenter size-full wp-image-55" title="img_0173" src="http://kctheveganteen.files.wordpress.com/2009/02/img_0173.jpg?w=490" alt="img_0173"   />I made these with the <strong>full fat version</strong> of the recipe, mainly to see how they differ from the lower fat version I typically make. These ones aren&#8217;t for me &#8211; <strong>the 1/2 cup of oil</strong> freaks me too much. My dad wouldn&#8217;t have touched the last batch had he known they were low fat &#8211; the fact that they were both <strong>whole wheat and vegan </strong>already scared him! </p>
<p>Dinner tonight is <strong>stir-fried veggies, brown rice, and last night&#8217;s tofu</strong>. Although it&#8217;s marinated Italian, I&#8217;m sure it&#8217;ll go alright with this dish. I had a teeny triangle (or three) earlier and it tastes <strong>even better</strong> today!</p>

			<content:encoded><![CDATA[<p>It&#8217;s 5:50 am and I&#8217;m already ready to go <strong>back to bed!! </strong>Sadly, I won&#8217;t be back in bed til eight or nine tonight&#8230;</p>
<p>My morning routine is a bit eccentric. It doesn&#8217;t take much time for me to get ready &#8211; 40 minutes tops &#8211; and I leave for school at 7 am, but I wake up at 5. I like to be able to get up, go on the internet for a bit, leisurely eat my breakfast, drink my coffee, chat with my dad before he leaves for work, etc. THEN at six I go get ready for school.</p>
<p>This morning I woke up<strong> starving</strong> so I had a huge breakfast. <strong>410 calories</strong> as opposed to my usual 200-300. Oh well &#8211; it&#8217;s Monday &amp; I&#8217;m probably going for at least a 3 mi run tonight. Anyway, no picture, but I had my <strong>cereal mix</strong> with a side of toast.<strong> Dave&#8217;s Killer Bread </strong>is soooo good! I topped it with a little <strong>Smart Balance Light</strong>. </p>
<p><strong>The Academy Awards</strong> were really good last night &#8211; I like how the show is more fast-paced and viewer friendly this year. <strong>Hugh Jackman </strong>was a good host!!  cried when Heath&#8217;s family accepted the award..and possibly when<strong> Queen Latifah </strong>sang &amp; the slideshow was played. I&#8217;m a softie like my daddy. </p>
<p> Almost six &#8211; I must go &amp; get ready!</p>

			<content:encoded><![CDATA[<p>I received the <strong>book </strong>about two weeks ago from my lovely cousin/best friend; a belated birthday/ Christmas present. I&#8217;ve been really into <strong>baking</strong> lately, mainly making recipes from <em><strong>The Joy of Vegan Cooking</strong></em><strong>,</strong> so tonight I broke in VWAV a bit. I&#8217;ve made the <strong>Best Pumpkin Muffins</strong> &#8211; my dad ADORES them, I need to make another batch. I added <strong>raisins</strong>, too, and switched out <strong>1/2 c<span style="font-weight:normal;"><strong>up oi</strong><strong>l</strong> for <strong>1/3 cup applesauce</strong>. This made them extra moist. I also made the <strong>Lemon Gem Cupcakes.</strong> I made them mini &#8211; 36 mini cakes as opposed to a dozen regular sized. These I wasn&#8217;t the biggest fan of -they didn&#8217;t stay together well.  I subbed out <strong>1/3 cup of the sugar</strong> for<strong> 1/3 cup calorie-free sweetener </strong>so perhaps that&#8217;s why. After sitting a few days, they got more lemon-y. I did not frost them.</span></strong></p>
<p>Anyway! Earlier, I pressed a block of <strong>firm tofu</strong>. I&#8217;ve only prepared tofu myself once and it went terribly, so this was pretty scary. I cut it into slices width wise, then halved them, then sliced the halves into triangles. Then, I marinated it in Isa&#8217;s <strong>Italian Marinade, </strong>baked it for 30 minutes (flipping after 20) and it turned out pretty good &#8211; EXTREMELY flavorful, pretty chewy, and pretty crispy. </p>
<p>My mom made <strong>chicken</strong> for the rest of the fam and <strong>&#8216;smashed&#8217; red potatoes</strong>, seasoned and with <strong>Earth Balance &amp; soy milk </strong>(gotta love her for<strong> veganizing </strong>an old recipe!). Right before I was going to steam two pounds of <strong>Brussels Sprouts</strong>, my mom blew up our <strong>microwave! </strong><em>VWAV</em> came to the rescue &#8211; in fifteen quick minutes I whipped up the <strong>Roased Brussels Sprouts with Toasted Garlic.</strong> I love how long &amp; fancy the name is when it is really the simplest recipe. </p>

<p>Please excuse the <strong>terrible cell phone picture</strong>! I didn&#8217;t have my camera on hand. It was all <strong>much</strong> more appetizing to look at than this picture leads you to believe.</p>
<p>I ended up eating half the tofu, maybe less, and had<strong> seconds </strong>on the mashed potatoes. I forgot how filling <strong>tofu</strong> is &#8211; all that damn <strong>protein</strong>. </p>
<p>My walk today was lovely &#8211; an hour of about 4 mph walking up hills and all around my town. It was the perfect temperature and I enjoyed myself so much! </p>
<p>Watching <strong>the Oscars</strong> and getting sleepy &#8211; waking up at five am for school tomorrow&#8230;Oh, I&#8217;ll probably have a Lemon Gem mini cupcake (mine came out to be 60 cal each) or a little teeny ice cream cone with <strong>Soy Delicious</strong> - chocolate peanut butter flavor! Or&#8230;both. ;] </p>
