For breakfast this morning, I had chocolate banana peanut butter oats! I used 1/2 cup oats, 1/2 cup soy milk, 1/2 cup water, 1/2 small banana, teeny bit of peanut butter, topped with, I don’t know- 1/3 cup Puffins – and a bit of some chocolate peanut butter frosting I made for cupcakes a while ago & never used. Next time, I’ll omit the peanut butter cause I couldn’t taste it – or just put it on top as opposed to stirring it in.

img_0192Also, I stirred in a tablespoon of flaxseeds.

img_0195Deeelicious. Problem is – about 350 calories of delicious. This held me over from 5:45 to about 4:00 pm with minor stomach growls though, so maybe it’s worth it.

After school, I went driving with my mom – got my permit on Wednesday so this was exciting! I love driving, it’s really enthralling so far, hahah. I’m terrified of parallel parking though.. 

When I got home, I started baking MORE muffins – this time Lemon Poppyseed for my sister in law, Jill. She’s three months pregnant with my second niece/nephew! So excited.<333 We’re going to visit my niece, Camille, Jill, and my brother Aaron tomorrow. I didn’t want to come empty handed!


I also had apple & peanut butter as well as a bunch more snacks – too many. ]: I also was scheduled to go out for Thai food with my friend, so this was baaaad Kasey.. 

I talked myself into ordering something more indulgent than sautéed veggies & tofu, but now I’m regretting it so much. I got sweet & sour tofu with veggies (definitely vegan, no worries there). It was fried though and I NEVER eat fried foods. I’m not overly full or anything but my mind is driving me insaaaane. I want to get on the treadmill RIGHT now but my mom won’t let me.. Ugh. Sometimes I wish I was as carefree as my friends when it comes to calories. I don’t have that super fast kid metabolism, unfortunately.. 

I’m trying to stop beating myself up.


I also made chocolate raspberry cookies and had a very small one. They’re whole wheat, low in fat, and almost sugar free so it should be okay..

Tomorrow, I want to go running in the morning before we leave for my brother’s house, hopefully I can. And I need to stop stressing. What’s done is done – I’m allowed to indulge..

More Muffin Mania.

Can I just say that I absolutely love Barack Obama? I’m still finding it difficult to wrap my head around the fact that he was really, truly elected. America is coming far, people. Slowly, but surely!

I’m praying that one hundred years from now (if not sooner) America will look at animal testing/cruelty the way we currently do slavery. Where is the moral difference? (Other than in speciesism – á la Peter Singer.) 

Anyway – sorry, but no pictures yet today. I had my typical cereal for breakfast, then an apple & peanut butter after school. Since then I’ve snacked (rather mindlessly – oops) on some Multigrain Crackers my mom picked up at Costco and some pretzels. For dinner, we’re having my FAVORITE Spanish Rice with salsa, those Low Carb Factory or whatever it is high fiber tortillas, aaand pinto beans. So simple yet so delicious. 

Just went for a lovely 5 mile run – felt soooo good to finally get that in again!! It was a really pleasant one. 

I might go make some Lemon Blueberry Muffins from The Joy of Vegan Baking if my mom will lend me the kitchen…

Monday Muffin Madness!

Ahhh, today was loooong. And I didn’t get a workout in ]: I’m pretty ticked at myself for that. After school, my mom & I had errands to run – I didn’t get home until 4:30 ish. As a snack, I had too many pretzels with Athens (I think that’s what it’s called) Roasted Red Pepper Hummus. I really need to make my own hummus – that was a terribly uneconomic purchase. Alongside that, I had a medium Granny Smith Apple. I always end up splurging on after school snacks – cause I don’t eat lunch!! Stupid of me, but it really is inconvenient.. Anyway, that turned out to be about 280 calories. Ugh, I can’t wait until I feel comfortable enough to stop counting calories… (I gained five or so pounds in the last few months due to little bites of this & that and big portion sizes, which is why I returned to calorie counting.) It’s a bit stressful.

I just baked two batches of ‘The Best Pumpkin Muffins‘ from VWAV with raisins. A dozen for my dad and a dozen for a friend who sampled one and loved it. Hopefully her family won’t be too dismayed at a dozen ‘weird’ vegan muffins in their kitchen…

I asked my mom to pick me up some the other day & the only ones she could find were these. img_0173I made these with the full fat version of the recipe, mainly to see how they differ from the lower fat version I typically make. These ones aren’t for me – the 1/2 cup of oil freaks me too much. My dad wouldn’t have touched the last batch had he known they were low fat – the fact that they were both whole wheat and vegan already scared him! 

Dinner tonight is stir-fried veggies, brown rice, and last night’s tofu. Although it’s marinated Italian, I’m sure it’ll go alright with this dish. I had a teeny triangle (or three) earlier and it tastes even better today!

I’m starving. I might post later, maybe not.

Vegan Cookies Galore!

Heyy, there! I finally have a picture to share, although I wish I had taken more today.

Although it was a Friday, a school day, my mom wanted me to go to the Northwest Flower (I just typed ‘flour’!) & Garden Show with her and my aunt today. It was in Seattle at the Convention & Trade Center, which I THINK I’ve been to before, but could be wrong. Anyway, we were relatively unimpressed – for $20 a person, there wasn’t all THAT much to see. It was beautiful, however, and I’m glad I went. We walked everywhere, which I loved – exercise without actually taking time to exercise. I ran a quick three miles yesterday but haven’t done my usual five miles since Tuesday. I actually probably won’t have a good workout until Sunday or Monday as I have plans all tomorrow. 

Anyway, afterwards, the three of us went out to lunch at a little Thai place called Mae Phim Thai Cuisine. It was somewhere around Pike and we stumbled upon it, hungry, with my ever ravenous appetite for Thai food. I got a rice noodles & vegetable dish with tofu, a little bit of an indulge compared to my usual sauteéd veggies with tofu. Gotta love the tofu though – I just am not too fond of preparing it myself. Not that I’ve given it many tries, but whatever. I will, as I have a package of firm tofu in my fridge at the moment.

Back to the day – after our lunch, we walked down through Pike Place Market. It was cold today, in the 40’s, but sunny, and the market gets tons of sun. I introduced my aunt to the Gum Wall, which she found amusing, then bought a massive, DELICIOUS vegan Snickerdoodle cookie from a bakery in the market. I couldn’t resist and it was worth every calorie. I wish I had gotten a picture!  I snuck little pieces of it out of my bag on the way to the ferry, enjoying it slowly. 

We took the Seattle/Bainbridge ferry back to ‘our side’ of the water, drove to Poulsbo, and stopped at my favorite grocery store, Central Market. It is pretty much the ONLY well stocked, health foodish store in Kitsap County. No Whole Foods, PCC Foods, Trader Joe’s, NOTHING! I’m so deprived. Anyway, I stocked up on lemon and peppermint extract (more on that in a minute), Bob’s whole wheat pastry flour, WholeSoy soy yogurt, Silk soy milk (my favorite), bananas, apples, lemons, acorn squash, and a few other things. Once I got home, I immediately decided to bake cookies!

I recently received The Joy of Vegan Baking as a gift from my mom. I want to make every recipe in the book, eventually! Today I made Double Chocolate Chip Mint Cookies. Oh. My. God. Heavenly! Ener-G Egg Replacer, Smart Balance Light, Splenda brown sugar blend, organic unrefined granulated sugar (bought it bulk from Central), vanilla & peppermint extracts, whole wheat pastry flour, unsweetened cocoa, baking soda, and 2/3 cup mini semisweet chocolate chips made up the cookies. They are sooooo good! The recipe said it would make 1 1/2 dozen cookies, rounded teaspoon sized, yet my batch yielded about 45! Gotta love that, brings the calorie count waaaaaaay down. In fact, I calculated this batch to be 60 calories per cookie! I cooked them just long enough and am very proud. Crispy, crunchy, chewy, soft, all at the same time. Pictures?!

Hopefully I can get them to work. I’m no food photographer, but these are some beautiful cookies! (And I’ll improve eventually, give me a chance.) 

I had leftover Thai for dinner. Also a sugar free soy latte from Starbucks for breakfast. And my Puffins/Kashi Puffs/Silk soy milk/banana breakfast cereal this morning. I brought a LäraBar as a snack, but didn’t eat it. It was a Chocolate Coconut Chew though, a flavor I’m eager to try.

Having a friend over tonight- she loves everything mint so I’m excited for her to try my cookies!!
